Guillermo González Beristáin

 

Originally from Ensenada, Baja California, he showed an interest in cooking from an early age.

Graduated with honors from The Culinary Institute of America, the chef worked in Michelin-starred restaurants in Paris, Madrid and Strasbourg.

In 1994 he took the position of chef at Ambrosia restaurant in Mexico City and later he was introduced as corporate chef at Ambrosia del Bosque Group.

With his mind set on creating his own restaurant, in 1998 he decided to open Pangea, a place that revolutionized the restaurant industry in Monterrey, which currently has managed to remain for six consecutive years in the list of the “50 Best Restaurants in Latin America” by S. Pellegrino & Acqua Panna.

With great determination and effort, Pangea evolved into the creation of “Grupo Pangea”, which currently consists of ten restaurants: Pangea, Bardot, Chinolatino, La Felix, La Embajada, Vasto, La Reynita, Libertad, La Estelina and Café Laurel.

In 2002, he decided to start his wine project Mariatinto, where he reflects the richness of his homeland. Among his other projects are: Bocanegra beer (2011), Balero Mexican red wine (2016), Tequila DELALUZ (2017), Agua Drama (2017), Milk Pizzeria (2017) and Kadoya (2018).

Some of the awards of which he has been honored with are “Chef Choice Award” by Latin America’s 50 Best Restaurants (2016) and “Lifetime Achievement Award by The Diners Club (2017).

In 2014 and 2015, he took the position of president within the Paralelo Collective, a group of chefs and gastronomy professionals from the northeastern part of Mexico who have participated in the transformation and growth of regional cuisine. Currently, he is part of the Diplomatic Corps of Chefs of Mexico, which seeks to promote Mexican gastronomy around the world. In 2016 and 2017, he participated as a judge in the reality show “Top Chef Mexico” produced by Sony Mexico.

Humberto Falcón

Humberto Falcón Cervantes was born in Mexico City on August 5, 1974. In 1986 he moved to Monterrey, N.L. He studied at the Tecnológico de Monterrey and graduated with a degree in International Commerce in 1995. After graduating, he started his first job in an important company in Monterrey, where he had the opportunity to travel around the Northeast of the United States serving clients. At that time, his passion for the food and wine industry arose. In a need to learn more about the world of wine, he left his first job to dedicate himself to wine sales in Monterrey, as Commercial Director at Vinoteca from 1998 to 2008.

In 1999 he met Guillermo González Beristáin at his restaurant Pangea where a long friendship began and a number of meetings around wine and food started. It is then that one day they decide to join forces to create a Mexican wine, Mariatinto, in 2002.

In 2004 Humberto studied oenology at the Estación de Oficios el Porvenir in the Valle de Guadalupe. A year later he was certified as a Sommelier by the Court of Master Sommeliers.

In 2009 Humberto and Guillermo venture to the French region of Roussillon, and buy 2 hectares of vineyard, from which they produce Sang Bleu and Madame Babette.

In 2008 Humberto started the Zonas project, which bottled wines from 4 different wine regions of Mexico, seeking to show the differences in varieties and styles of Mexican terroirs. That same year he founded Vinos de Culto, a company that imports and distributes wines from small family wineries mainly from France, Spain and of course Mexico.

In 2010 he inaugurated The Little Wine Market in Monterrey and in 2012 CRU The Little Wine Bistro, both spaces dedicated to sharing his passion for wine and food.

In 2016, he launched his new wine project called Balero, a wine produced in the Guadalupe Valley for a younger market than Mariatinto.

In 2017 they launched M de Mariatinto, a commemorative wine of the first 15 years of adventure; a selection of the best 17 barrels of the 2015 vintage.

In 2019, the Sang Bleu line is complemented with a white wine and a rosé wine produced in the Languedoc region of France.
